
So I made this salad a while ago, so I can't remember exact quantities (it can really be made to taste & the quantity you need), so here is the general idea. (I know this isn't the prettiest salad, but it tasted yummy). My inspiration is from my love of all things artichoke and a little bit from Jamie Oliver (the chef of course), he is always putting warm things on top of salads. So here it goes...
Warm Artichoke & Lemon Salad
Olive oil
Chicken breast, diced
Artichoke hearts, roughly chopped
Roasted red peppers, drained and sliced
Chopped garlic
Lemon zest & juice
Salt
Pepper
Red pepper flakes
Cannelloni beans
Baby Lettuce
In a saute pan, heat olive oil, add chicken, saute until no longer pink, add artichokes, garlic, red peppers, salt, pepper, red pepper flakes, and lemon zest. Saute until warm. Remove from heat.
For dressing mix olive oil and lemon juice, or you can just dress the lettuce with olive oil, then with lemon juice. Be careful you don't get too much acidity. Dress baby lettuce. Top with artichoke mixture.
For the cannelloni beans, heat a small amount of olive oil in a pan, add beans and saute them-only for a second. Add to the salad.
I needed something crunchy, which I didn't have, but some sliced toasted baguette rubbed with garlic would be great.

You need to come and stay with us for awhile and cook for me. But then I would be fatter then I am now and that wouldn't be good.
Sounds like a good one. I love artichokes. I put steamed broccoli on my salads and it tricks my palette into thinking I'm eating meat and I feel more satisfied. I get the marinated artichokes from Costco and I use them in just about everything, very delicious!
